Hickory-nut Taffy

Ingredients

Directions

The book gives no oven temperature. The 300°F in the steps was added when the recipe was transcribed, as a starting point.

Make the taffy

  1. In a large pot, combine sugar, molasses, and cream of tartar.

  2. Cook the mixture until it reaches the hard crack stage (300°F or 150°C).

Add the nuts and shape

  1. Pour the mixture onto a greased slab.

  2. Sprinkle the chopped hickory nuts over the taffy and work the nuts into the taffy until evenly distributed.

  3. Run the taffy through a flake machine, about 2 inches wide.

  4. Mark the taffy into sticks using a caramel marker.

What each ingredient does

Sugar
Forms the base of the taffy and sets firm as it cools, giving it its chewy body.
Molasses
Adds color and a deeper, caramel-like flavor to the taffy.
Cream of tartar
Acidifies the syrup, helping prevent sugar crystals from forming for a smoother texture.
Hickory nuts
Add crunch and a rich, nutty flavor that contrasts with the chewy candy.

The step that matters

Cooking to the hard crack stage. Sugar syrup must reach about 300°F (150°C) to set firm when cooled. Stopping early leaves the taffy soft and sticky, while overcooking makes it brittle and hard to work.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, molasses, cream):

  1. Almondfits better
  2. Chestnutfits about as well
  3. Nutsthe original
  4. Pistachiofits about as well

Fit is the average pairing score against sugar, molasses, cream. Candidates are from the same food group and used in at least 100 recipes.
