Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet, brittle candy base when cooked to hard crack stage.
Molasses
Colors the taffy and adds a deeper, caramel-like flavor.
Cream of tartar
Adds acidity that helps keep the sugar syrup smooth and prevents crystallization.
Hickory nuts
Add crunch and a rich, nutty flavor to the brittle taffy.

The step that matters

Cooking to the hard crack stage. Sugar must reach the hard crack temperature range so the cooled taffy sets firm and brittle. Stopping early leaves it soft and sticky, while overcooking can scorch it and give a bitter taste.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, molasses, cream):

  1. Almondfits better
  2. Chestnutfits about as well
  3. Nutsthe original
  4. Pistachiofits about as well

Fit is the average pairing score against sugar, molasses, cream. Candidates are from the same food group and used in at least 100 recipes.
