What each ingredient does

Sugar
Forms the bulk of the candy and sets firm as it cooks to hard crack.
Cream of tartar or glucose
Inhibits sugar crystallisation, keeping the candy smooth rather than grainy.
New orleans molasses
Adds depth of flavour and a darker colour to the candy.
Sweet butter
Adds richness and a tender texture to the candy.
Picked walnuts
Add nutty flavour and crunchy texture throughout the candy.
Baking soda
Reacts with the hot sugar mixture to lighten it and make it brittle.

The step that matters

Stir in baking soda. Baking soda reacts quickly with the hot sugar mixture, releasing gas that aerates it. Adding it off the heat and stirring briskly keeps the reaction even and the candy light instead of collapsing.
