Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whites of eggs
Whipped egg whites trap air, giving the parfait a light, airy structure.
Double cream
Whipped cream adds fat and body, giving a smooth, rich texture after freezing.
Sugar
Sugar cooked to thread stage adds sweetness and helps keep the frozen texture soft.
Grape juice
Provides the main flavour and some liquid for the parfait base.

The step that matters

Pouring the hot syrup into the egg whites. Pouring in a fine, steady stream while beating constantly gently cooks the whites into a stable foam. Pouring too fast or without beating can scramble the egg or collapse the foam.
