Why it works: Almond and lemon match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 5,655 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Almond Rock

Ingredients

Directions

Make the candy

  1. In a saucepan, combine brown sugar and water.

  2. Cook until the thermometer reads 290°F (143°C) or until a drop in cold water cracks like an eggshell.

  3. Remove from heat and flavor with lemon extract.

Add the almonds and set

  1. Clean the almonds by rubbing them between two cloths without blanching.

  2. Slightly warm the almonds and add them to the candy mixture.

  3. Pour the mixture into oiled pans, about 2 inches thick.

  4. Cut into pieces with a sharp, oiled knife before it cools.

What each ingredient does

Brown sugar
Provides the bulk of the candy and its sweet, caramel-like flavor as it cooks.
Water
Dissolves the sugar so it can be cooked smoothly into a syrup.
Almonds
Add crunch and nutty flavor to the brittle-like candy.

The step that matters

Cook to 290°F (143°C), or to the cold-water crack test. Sugar syrup hardens as its temperature rises and water evaporates. Stopping short leaves a candy that is soft or sticky, while overcooking makes it bitter and brittle enough to break teeth. The thermometer or cold-water test shows when the syrup is at the hard-crack stage.

Swap the lemon
