Plain White Taffy

Ingredients

Directions

Make the syrup

  1. In a large pot, combine the sugar and water. Stir over heat until the sugar dissolves.

  2. Add the cream of tartar and boil until it reaches the 'ball' stage.

  3. Stir in the butter until melted and fully mixed.

  4. Add lemon oil or vanilla and boil until it reaches the 'crack' stage.

Cool and shape

  1. Pour the mixture onto a greased slab and let it cool.

  2. Once cool, cut into pieces or pull on a hook until white.

  3. Shape into bars.

  4. Alternatively, twist into a mass and break as needed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet, crystalline base that the taffy is built on.
Cream of tartar
Acid that helps keep the sugar from crystallising too coarsely, giving a smoother texture.
Butter
Adds fat that softens the texture and gives the taffy a rich mouthfeel.
Water
Dissolves the sugar so it can be boiled into a syrup.

The step that matters

Boiling to the 'crack' stage. Sugar syrup must reach the correct temperature to set firm but chewable. Undercooking leaves the taffy sticky and soft, while overcooking makes it hard and brittle.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream, butter):

  1. Vanillafits better
  2. Strawberryfits better
  3. Coconutfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, cream, butter. Candidates are from the same food group and used in at least 100 recipes.
