Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the bulk of the sweetness and the body of the taffy.
Molasses
Adds deeper flavour and moisture, and helps the taffy stay chewy.
Butter
Adds fat for a softer, smoother texture and richer flavour.

The step that matters

Boiling to the crack stage. The sugar must be cooked to the crack stage so that, once cooled, the taffy sets firm yet still bites cleanly. Stopping early leaves it soft and sticky, while going too far makes it hard and brittle.

Swap the peanut

How well each one fits the dish's main ingredients (sugar, molasses, butter):

  1. Almondfits better
  2. Pecansfits better
  3. Walnutfits about as well
  4. Peanutthe original

Fit is the average pairing score against sugar, molasses, butter. Candidates are from the same food group and used in at least 100 recipes.
