Washington Taffy

Ingredients

Directions

Make the taffy

  1. Combine molasses and sugar in a large pot over low heat.

  2. Once it starts to boil, add sweet cream and butter while stirring constantly.

  3. Cook the mixture until it reaches the 'ball' stage (262°F in summer, 258°F in winter).

  4. Remove from heat and stir in vanilla.

Shape and wrap

  1. Pour the mixture onto a slab to a thickness of about ½ inch.

  2. When nearly cool, score the taffy with a knife and cut into 2x4 inch bars.

  3. Wrap each bar in wax paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Provides the dark color, deep flavor and chewy body of the taffy.
Sugar
Sweetens the taffy and, once cooked to the ball stage, sets it firm but chewy.
Sweet cream
Adds richness and softness, making the taffy tender rather than brittle.
Butter
Adds fat for smooth texture and a rich flavor that keeps the taffy from sticking.

The step that matters

Cooking to the ball stage. The final cooking temperature controls firmness. Cooking too little leaves the taffy sticky and soft, while cooking too far makes it hard and brittle once cooled. The target differs with the season because humidity affects how much moisture evaporates.
