What each ingredient does

Sugar
Provides sweetness and body, and helps preserve the syrup once cooled and bottled.
Raspberry juice
Supplies the main flavor and liquid base of the syrup.

The step that matters

Melting the sugar over low heat without boiling. Gentle heat dissolves the sugar into the juice without scorching it or driving off flavor. Boiling would also cause foam to form and could thicken or darken the syrup unevenly.
