Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clarified isinglass
Sets the liquid into a clear, firm jelly as it chills.
Fine clarified sugar syrup
Provides sweetness and body, helping the jelly hold a smooth texture.
Good brandy
Adds alcohol flavour and aroma, and slightly softens the set.
Cochineal
Gives the jelly its pink colour.

The step that matters

Turn out the jelly quickly after a brief warm-water dip. Only a quick dip loosens the jelly from the mould without melting its outer surface. Leaving it in warm water too long softens the set, so the jelly can slump or lose its shape on the plate.
