Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Sift the flour onto a clean surface and mix in the sugar and ginger.

  2. Create a well in the center and warm the treacle and butter in a pan until melted.

  3. Pour the melted mixture into the well.

  4. Pound the orange, lemon, and citron peels, then pass through a fine sieve and mix into the treacle.

  5. Combine everything into a paste and roll it out with a little flour.

Shape and bake

  1. Cut into desired shapes, or pinch pieces with your fingers.

  2. Bake on buttered paper in a hot oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the main structure of the paste so the nuts hold their shape.
Treacle
Adds moisture, sweetness and a dark, rich flavor that helps the nuts brown.
Butter
Adds fat for tenderness and helps the paste bind smoothly.
Ground ginger
Provides the characteristic warm, spicy aroma of gingerbread.
Moist sugar
Adds sweetness and moisture, and helps the nuts brown in the oven.

The step that matters

Pound and sieve the citrus peels. Peels left in coarse pieces stay chunky and can be bitter or tough in the finished nut. Pounding and sieving them fine lets the flavor spread evenly through the treacle and dough.

Swap the ginger

How well each one fits the dish's main ingredients (flour, sugar, butter, orange, lemon):

  1. Cinnamonfits better
  2. Nutmegfits about as well
  3. Thymefits about as well
  4. Gingerthe original

Fit is the average pairing score against flour, sugar, butter, orange, lemon. Candidates are from the same food group and used in at least 100 recipes.
