Sponge Later and Jelly Roll

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a large mixer, beat the egg yolks and sugar until light and fluffy.

  2. Add the dissolved baking soda and milk mixture, followed by the lemon oil.

  3. Sift the cream of tartar with the cake flour and gradually mix it into the batter.

Bake

  1. Pour the batter into prepared pans and bake in a hot oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and structure, helping the batter set as it bakes.
Sugar
Sweetens the batter and helps the eggs trap air when beaten to a light, fluffy texture.
Baking soda
Reacts with the acidity in the batter to release gas, helping it rise.
Cake flour
Provides the structure that holds the cake together as it bakes.
Cream of tartar
Adds acidity that supports the baking soda reaction and stabilises the batter.

The step that matters

Beat the egg yolks and sugar until light and fluffy. Beating incorporates air into the yolks and sugar, which gives the batter lift before it bakes. Under-beating leaves a dense sponge, so this step sets the final texture.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, milk, cream, flour):
