Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, wobbly gel as it cools.
Wine
Adds flavour and a little acidity to the liquid.
Granulated sugar
Adds sweetness and body to the jelly.
Lemons
Add acidity and bright citrus aroma.

The step that matters

Dissolve the gelatin in cold water. Gelatin granules must first soak and then fully dissolve in the liquid. Undissolved pieces leave grainy patches and can weaken the set, so the gelatin should be completely smooth before it is combined with the other liquids.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, wine, sugar):

  1. Vanillafits better
  2. Pineapplefits better
  3. Applefits better
  4. Lemonthe original

Fit is the average pairing score against gelatin, wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
