Iced Fruits for Desserts

Ingredients

Directions

  1. Dip the fruit in the beaten egg white.

  2. Coat the fruit in finely pulverized sugar.

  3. Repeat the dipping in egg white and coating in sugar until the icing reaches the desired thickness.

  4. For oranges and lemons, carefully pare and remove the white inner skin to prevent bitterness, then cut into thin slices or quarters.

  5. For cherries, strawberries, and currants, choose the largest and finest, removing stems.

  6. Pare peaches and cut them in halves, or leave stems on for pears and ice them.

  7. Cut pineapples into thin slices and then divide into quarters.
