What each ingredient does

Sugar
Provides the bulk of the sweetness and the crystalline base that sets the candy's structure.
Glucose
Interferes with sugar crystallization, keeping the candy smoother and less likely to turn grainy.
Molasses
Adds depth of flavour and colour, and some moisture, to the candy.
Baking soda
Reacts with the hot sugar mass to create a lighter, more porous texture.
Black walnut meats
Contribute nutty, bitter-edged flavour and crunchy texture throughout the candy.

The step that matters

Stir in the kettle until it starts to grain. Stirring controls sugar crystallization. Stir too little and the mass stays glassy; stir too long after it begins to set and it becomes too hard to shape before it cools.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, molasses, meat):

Fit is the average pairing score against sugar, molasses, meat. Candidates are from the same food group and used in at least 100 recipes.
