What each ingredient does

Sugar
Forms the brittle base and sets into a crisp, hard texture as it cools.
Glucose
Slows crystallisation so the sugar stays smooth and does not grain.
Dark molasses
Adds colour, depth and a slightly bitter-sweet flavour to the brittle.
Butter
Adds fat for a richer flavour and a tender bite in the set candy.
Chopped almonds
Provide crunch and nutty flavour throughout the brittle.

The step that matters

Stirring in molasses and butter to 320°F (160°C). Sugar syrup must reach the right temperature to set crisp when cooled. Stopping early leaves a soft, sticky result, while overcooking causes bitterness and burning.
