Ingredients

Directions

Make the taffy

  2. Cook the mixture until it reaches a soft crack stage, or 264°F (129°C).

Finish and cool

  1. Remove from heat and add flavoring with either lemon or vanilla.

  2. Pour the mixture thinly onto a slab.

  3. Once cool, mark and wrap the taffy like butter scotch.

What each ingredient does

Granulated sugar
Provides the bulk of the sweetness and sets firm as the mixture cools.
Glucose
Inhibits crystallization, keeping the taffy smooth and chewy rather than grainy.
New orleans molasses
Adds deep color, a robust flavor, and extra moisture to the taffy.
Sweet cream
Adds milk solids and moisture, softening the texture and mellowing the sweetness.
Butter
Adds fat for a tender bite and a rich, buttery flavor.

The step that matters

Cooking to soft crack stage. The taffy's final texture depends on reaching 264°F (129°C). Stopping early leaves it too soft and sticky, while going much higher makes it hard and brittle.
