Directions

Prepare the peaches

  1. Scald the peaches and set them aside in a pan with their syrup until the next day.

  2. Carefully arrange the peaches in wide-mouthed jars.

What each ingredient does

Peaches
Provide the fruit that softens and becomes the main flavour of the preserve.
Syrup from scalded peaches
Carries peach flavour and sugar, and boiling it down thickens it into a rich coating.
Pale or white brandy
Adds alcohol that preserves the fruit and contributes a sharp, warming aroma.

The step that matters

Let the syrup cool before pouring it over the peaches. Adding brandy to syrup that is still very hot can drive off alcohol and aroma. Letting it cool nearly to room temperature keeps the brandy's flavour and reduces evaporation before the jars are sealed.

Swap the peach

How well each one fits the dish's main ingredients (syrup, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits about as well
  4. Peachthe original

Fit is the average pairing score against syrup, brandy. Candidates are from the same food group and used in at least 100 recipes.
