Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Glucose
Inhibits crystallization, keeping the taffy smooth and chewy rather than grainy.
Sugar
Provides sweetness and forms the cooked sugar base that sets into the taffy.
Chip coconut
Adds coconut flavor and a textured bite to the finished taffy.

The step that matters

Cooking to 290°F (143°C). The final temperature controls the hardness of the set candy. Undercooking leaves it soft and sticky, while overcooking makes it brittle. Accurate thermometer readings matter.

Swap the coconut

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Coconutthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
