Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds dark color, deep flavor, and moisture that keeps the taffy soft.
Sugar
Provides sweetness and forms the crystalline body of the candy as it cooks.
Glucose
Inhibits crystallization, keeping the taffy smooth and chewy rather than grainy.
Butter
Adds fat that tenderizes the texture and gives a softer, richer bite.

The step that matters

Cook the mixture to 260°F (127°C). The final temperature sets how firm the taffy will be once cooled. Undercooking leaves it sticky and soft, while overcooking makes it hard and brittle.

Swap the cassia

How well each one fits the dish's main ingredients (molasses, sugar, butter):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Nutmegfits better
  4. Cassiathe original

Fit is the average pairing score against molasses, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
