Boiled Meats
Ingredients
Directions
Scrape off the pulp from the beef with a silver knife, discarding the tough fiber.
Mold the scraped beef into cakes about 1 inch thick.
Heat a thick iron or steel pan until scorching hot.
Sprinkle coarse sea salt in the pan to prevent sticking.
Cook the beef cakes in the pan, turning with a knife or spoon to retain juices.
Turn quickly at first, then reduce heat and finish cooking slowly.
