What each ingredient does

Rice
Starch that swells and softens as it absorbs water, giving the cooked grains their body.

The step that matters

Keep the water at a continuous boil when adding unsoaked rice. Adding rice gradually and keeping the water boiling stops the temperature from dropping, so the grains cook evenly instead of turning gummy or unevenly done.
