Bran Biscuits for Constipatioh

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the bran

  1. Wash the bran in cheesecloth under cold water until the water runs clear.

  2. Bring the agar-agar and cold water to a boil.

  3. Add the salt and hot agar-agar solution to the washed bran.

Shape and bake

  1. Mold the mixture into two cakes and place them on oiled paper in a pan.

  2. Let the cakes stand for half an hour until firm and cool.

  3. Bake in a moderate oven at 350°F (175°C) for 30 to 40 minutes.

What each ingredient does

Bran
Provides the bulk and fiber that give the biscuits their body and structure.
Agar-agar
Gelling agent that sets the hot liquid into a firm mass as it cools.

The step that matters

Let the cakes stand until firm. Agar sets as it cools, so the cakes must stand and cool fully before handling or baking. Moving them too early can cause them to break or lose their shape.
