Why it works: Flour and nutmeg are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 18,623 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the batter
Preheat the oven to 400°F (200°C).
Beat the egg whites with salt until very thick.
Beat the yolks until thick and lemon colored.
Combine the yolks with the whites and beat together.
Gradually fold in the Lister's Diabetic Flour.
Bake and cool
Pour the mixture into a tin measuring 5 inches long, 3 inches wide, and 3 inches high.
Bake for 15 minutes at full heat, then reduce the heat by half and bake for an additional 10 minutes.
If using a coal or wood oven, bake for 15 to 30 minutes.
Do not remove from the tin until partly cooled.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whites whipped to foam give the bread its airy structure, and yolks add richness and color.
- 1 box lister's diabetic flour
- Provides the body that sets the crumb once the batter is baked.
The step that matters
Beat the egg whites until very thick. Whipped egg whites trap air that expands in the oven and lifts the batter. Under-beaten whites produce a dense, flat loaf, so they should hold stiff, glossy peaks before the flour is folded in gently to keep that air.
Swap the nutmeg
The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (egg, flour):
- Jalapenofits better
- Capersfits about as well
- Nutmegthe original
- Turmericfits about as well
Fit is the average pairing score against egg, flour. Candidates are from the same food group and used in at least 100 recipes.
