What each ingredient does

Oatmeal
Provides the starch and body that thicken the porridge as it cooks.

The step that matters

Mixing the oatmeal into a smooth paste before adding water. Stirring the oatmeal with a little cold water first separates the particles so they disperse evenly. Adding the water all at once without this step can leave lumps that are hard to smooth out once the starch begins to gelatinise.
