Baba with Apricots

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Gently tap the mold on the edge of a kitchen dresser to release the Baba onto a hair sieve.

  2. In a saucepan, combine the syrup from the preserved apricots, plain syrup, apricot jam, and brandy; bring to a boil.

  3. About 30 minutes before serving, warm the Baba in the oven at 350°F (175°C) until heated through.

  4. Turn the Baba upside down, cut off the crust from the bottom, and carve out a pointed piece from the center.

  5. While the sauce is hot, pour half of it into the Baba through the hole.

  6. Place the Baba on a serving dish and pour the remaining sauce around the base.

  7. Serve with whipped cream and sprinkle with pounded sugar.
