Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Mix breadcrumbs, salt, white pepper, and grated nutmeg in a bowl.

  2. Open the oysters and dip each in the beaten egg.

  3. Roll the dipped oysters in the seasoned breadcrumbs.

Bake and serve

  1. Place each oyster in its lower shell and add a small piece of butter on top.

  2. Bake in a 400°F (200°C) oven for a few minutes until hot.

  3. Squeeze a little lemon juice over the oysters before serving.

What each ingredient does

Oysters
Serve as the main ingredient, cooked briefly until heated through in their shells.
Beaten egg
Acts as a binder so the breadcrumbs stick to the oysters.
Breadcrumbs
Form a crisp, lightly browned coating over the oysters as they bake.
Butter
Adds richness and moisture as it melts over the oysters.

The step that matters

Bake for only a few minutes. Oysters turn tough and rubbery when overcooked. Baking only until they are hot keeps them tender while the coating sets and browns.

Swap the white pepper

How well each one fits the dish's main ingredients (nutmeg, oyster, egg, butter, lemon):
