What each ingredient does

Ox-tail
Provides the meat and gelatin-rich connective tissue that gives the soup body and richness as it simmers.
Water or clear stock
Forms the liquid base in which the flavours from the vegetables and meat are extracted.
Carrots
Add natural sweetness and aromatic depth to the broth.
Onion
Adds savoury, aromatic flavour to the broth as it simmers.
Celery
Contributes aromatic, savoury flavour to the broth.

The step that matters

Removing the scum as it rises. Scum is coagulated protein and impurities that rise during boiling. Skimming it early keeps the broth clear and prevents bitter or muddy flavours from settling into the soup.

Swap the mace

How well each one fits the dish's main ingredients (carrot, onion, clove, parsley, thyme, celery):

  1. Marjoramfits better
  2. Winter savoryfits better
  3. Allspicefits better
