Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Lobster Soup

Ingredients

Directions

Prepare the lobster

  1. Remove the meat from the bodies, claws, and tails of the lobsters, discarding the brown fur and head bag.

  2. In a mortar, beat the lins, chine, and small claws.

Make the soup

  1. Boil in 2 quarts of water with the French roll, white pepper, salt, anchovies, onion, sweet herbs, and lemon peel until flavorful.

  2. Strain the mixture.

  3. In a mortar, beat the spawn with butter, nutmeg, and flour. Mix the beaten spawn with 1 quart of cream.

  4. Cut the lobster tails into pieces. Boil the lobster pieces in the soup.

Add forcemeat and serve

  1. Make forcemeat balls from the remaining lobster, mace, pepper, salt, crumbs, eggs, and a little flour. Heat the forcemeat balls in the soup.

  2. Serve.

What each ingredient does

Lobster meat
Provides the main flavour and tender pieces of shellfish in the finished soup.
Cream
Adds richness and a smooth body to the soup.
Eggs
Bind the forcemeat balls so they hold their shape while heating.
Butter
Adds fat and richness, carrying flavour into the spawn mixture.
Flour
Thickens the spawn mixture so it blends smoothly into the cream.

The step that matters

Mixing the beaten spawn with cream. Flour in the spawn mixture must be fully blended before combining with the cream, or lumps will form and the soup will look grainy rather than smooth.

Swap the white pepper
