Directions
Cut the lean beef into 1-2 inch square pieces, removing all fat, bones, tendons, and fasciae.
Use an American Chopper to separate the muscle pulp from connective tissue.
Scrape the muscle pulp off the chopper with a spoon at intervals.
Form the muscle pulp into cakes, pressing just enough to hold them together.
Broil the cakes until cooked through, avoiding pressing them too firmly.
