What each ingredient does

Lettuce
Forms the body of the dish and softens as it cooks, becoming tender in the gravy.
Rich brown gravy
Adds savoury flavour and moisture as the lettuce simmers.

The step that matters

Boil the lettuce until nearly done, without overcooking it. Heat breaks down the lettuce's cell walls, so it softens. If it cooks too long it turns limp and falls apart, and it will not hold its shape when stewed in the gravy.
