Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Egg white and shell
When heated, the egg white coagulates and traps impurities, clarifying the liquid.
Lemon
Supplies the peel and juice that give the jelly its bright, sharp flavour.
Brandy
Adds aroma and flavour to the finished jelly.

The step that matters

Straining through a jelly bag until clear. Clarity depends on the egg white having coagulated and trapped particles during boiling. Rushing the straining or disturbing the bag lets cloudy sediment pass through, leaving the jelly murky instead of sparkling.
