Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the oysters

  1. Boil the oysters and their liquor, then remove the gills and strain the liquor.

  2. Grease china oyster shells well and coat them with breadcrumbs.

Fill the shells

  1. Place 2 or 3 divided oysters into each shell.

  2. Season with pepper and salt, then pour a little oyster liquor over the oysters.

  3. Sprinkle more breadcrumbs on top and pour melted butter over everything.

Bake and serve

  1. Brown in the oven at 400°F (200°C) and serve very hot.

What each ingredient does

Oysters
Form the main filling and provide the savory seafood flavor of the dish.
Breadcrumbs
Form a crisp, golden topping and coating once browned in the oven.
Butter
Adds richness and moisture and helps the breadcrumb topping brown.

The step that matters

Browning in the oven. Oysters cook quickly and turn rubbery if overheated, while the breadcrumb topping needs enough heat to brown. Watch closely so the oysters stay tender and the topping turns golden.
