Bread, and Bread-making

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mix unbolted flour with pure water and best yeast.

  2. Knead the dough well to ensure even distribution of yeast.

  3. Place the dough in well-prepared pans.

  4. Allow the dough to rise in a warm place, uncovered.

  5. Bake in a moderate oven at 350°F (175°C) until golden brown.

  6. Let the bread cool in a good airy place for at least 24 hours before eating.
