Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Mix together the cheese, butter, flour, and cayenne pepper until well combined.

  3. Knead the mixture into a stiff paste.

  4. Roll out the paste to about a quarter of an inch thick.

  5. Cut the paste into narrow strips about four inches long.

  6. Twist the strips and lay them on a greased baking sheet.

  7. Bake for about ten minutes until golden.
