Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Soak the peas overnight in water.

Cook the soup

  1. In a pot, combine soaked peas, chopped onion, carrot, turnip, and potato.

  2. Add 4 cups of water and bring to a boil.

  3. Reduce heat and simmer until peas are soft, about 1 hour.

  4. Season with salt to taste and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peas
Form the body of the soup and thicken it as they break down during simmering.
Potato
Adds starch that helps give the soup a fuller, thicker texture.

The step that matters

Simmer until the peas are soft. Dried peas need a long, gentle simmer to soften fully. Stopping early leaves them firm and grainy, and a rolling boil can break the pot contents apart unevenly.

Swap the peas

How well each one fits the dish's main ingredients (onion, carrot, turnip, potato):

  1. Lentilsfits better
  2. Beansfits better
  3. Chickpeafits better
  4. Peasthe original

Fit is the average pairing score against onion, carrot, turnip, potato. Candidates are from the same food group and used in at least 100 recipes.
