Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbread
Provides the main body and substance of the salad.
Heavy cream
Whipped to stiffness to give the mould a light, airy texture.
Gelatin
Sets the cream mixture so it holds its shape when chilled and unmoulded.
Vinegar
Adds acidity that brightens the rich cream and sweetbread.
Cucumber
Adds crisp texture and fresh, mild flavour.

The step that matters

Set the mixture in ice water and stir until it begins to thicken. Gelatin sets as it cools, so the mixture must thicken without fully setting. Chilling too far before folding in the solids can make it lumpy, while under-chilling lets the cream deflate and the mould fail to hold its shape.

Swap the parsley

How well each one fits the dish's main ingredients (cucumber, celery, cream, gelatin, vinegar, lettuce):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits about as well
  4. Parsleythe original

Fit is the average pairing score against cucumber, celery, cream, gelatin, vinegar, lettuce. Candidates are from the same food group and used in at least 100 recipes.
