Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Scalloped Oystebs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the oysters and their liquor, then remove the gills from the oysters and strain the liquor.

  2. Grease china oyster shells well and coat them with breadcrumbs.

  3. Place 2 or 3 divided oysters into each shell and season with pepper and salt.

  4. Pour a little oyster liquor over the oysters and sprinkle more breadcrumbs on top.

  5. Drizzle melted butter over the breadcrumbs and brown in the oven at 400°F (200°C).

  6. Serve very hot.
