Sweetbreads and Veal

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Stew the prepared sweetbreads in milk.

  2. Roll the sweetbreads in slices of fat bacon.

  3. Place in a 400°F (200°C) oven for 15 minutes.

Braise and serve

  1. Remove the bacon and cut the sweetbreads into slices.

  2. Sprinkle grated Parmesan cheese over the slices.

  3. Return to the oven and braise in rich brown gravy.

  4. Serve on gluten bread crostini with stewed tomatoes, green peas, fresh French beans, and stewed mushrooms.

What each ingredient does

Prepared sweetbreads
Provide the tender, delicate meat that forms the centre of the dish.
Slices of fat bacon
Baste the sweetbreads with rendered fat, adding moisture, savoury flavour and browning.
Grated parmesan cheese
Melts and browns on the surface, adding savoury flavour and a golden crust.
Rich brown gravy
Braises the sweetbreads in liquid, keeping them moist and adding savoury depth.
Milk
Gently stews the sweetbreads, mellowing their flavour and keeping them soft.

The step that matters

Stewing the sweetbreads in milk. Sweetbreads are delicate and can toughen or turn grainy if overcooked or boiled hard. Gentle, low-heat stewing in milk keeps the texture tender and the flavour mild.

Swap the peas

How well each one fits the dish's main ingredients (milk, parmesan cheese, bread, tomato, beans, mushroom):

  1. Lima beansfits better

  3. Chickpeafits about as well
  4. Chestnutfits less well
