Beef Tea
Ingredients
Directions
The book gives no oven temperature. The 176°F (80°C) in the steps was added when the recipe was transcribed, as a starting point.
Remove visible fat and connective tissue from the beef.
Chop the beef and cover it with cold water to extract the juices.
Heat the mixture slowly to about 176°F (80°C).
Filter the liquid to remove solid material and cool it.
Remove the solidified fat and reheat the liquid to approximately 176°F (80°C).
Add salt to taste.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
