What each ingredient does

Dalya
Cracked wheat whose starch swells in the boiling water and thickens the porridge.
Dates
Add sweetness and a soft, chewy texture to the porridge.

The step that matters

Add the dates without stirring, five minutes before serving. Dates soften gently in the hot porridge when left undisturbed, so they keep their shape as pieces. Stirring them in would break them apart and blend them into the thickened base.
