Why it works: Parsley and capers match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,550 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Aspic of Fillets of Trout

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Lightly bake the trout fillets in a covered pan with butter and seasonings.

  3. Cool the fillets with a light weight on top to flatten them.

  4. Cut out rounds from the cooled fillets, about the size of a silver dollar.

  5. Line a mold with a coating of aspic.

  6. Arrange the fillet rounds in the mold, adding parsley, eggs, anchovies, and capers in decorative patterns.

  7. Fill the center with more fillets mixed with mayonnaise jelly.

  8. Chill until set, then turn out onto a lace paper-covered dish.
