What each ingredient does

Gelatin
Forms the gel that sets the dish firm and sliceable when chilled.
Maraschino liqueur
Adds alcohol-based aroma and flavor that comes through the sweet gel.
Whole fruits
Add natural flavor, color and texture as pieces suspended in the set gelatin.
Sugar
Adds sweetness to balance the liqueur and fruit.

The step that matters

Soak the gelatin in cold water until softened.. Gelatin must first hydrate in cold water so its granules swell evenly. Adding it dry or to hot liquid without soaking can leave lumps and weaken the final set.

Swap the apricot

How well each one fits the dish's main ingredients (gelatin, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Apricotthe original

Fit is the average pairing score against gelatin, sugar. Candidates are from the same food group and used in at least 100 recipes.
