Carrot Soup

Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main body, sweetness and flavour of the soup.
Butter
Adds richness and carries flavour while the carrots cook gently.
Stock or gravy soup
Supplies liquid that softens the carrots and forms the soup base.

The step that matters

Stew the carrots gently without browning. Browning gives bitter, caramelised notes that change the soup's clean, sweet carrot flavour, so low gentle heat in the butter is needed.

Swap the carrot

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotthe original
  4. Onionfits about as well

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
