Why it works: Pepper and allspice match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pickled Beetroot

Ingredients

Directions

Prepare the beets

  1. Wash the beets thoroughly, being careful not to prick the skin.

  2. Place the beets in boiling water and simmer gently for about 30 minutes.

  3. Remove the beets and let them cool.

  4. Peel the beets and cut them into slices about ½ inch thick.

Make the pickle

  1. Boil the vinegar with pepper and allspice for 10 minutes, then let it cool.

  2. Pour the cooled vinegar over the sliced beets.

  3. Cover with a bladder to exclude air and let sit for one week before using.

What each ingredient does

Beets
Are the main vegetable, softened by simmering and then flavored as they soak in the vinegar.
Vinegar
Provides the acidity that preserves the beets and gives the pickle its sharp, tangy taste.
Whole pepper
Adds a warm, sharp spice that infuses into the vinegar during boiling.
Allspice
Adds aromatic, warm spice notes that flavor the pickling liquid.

The step that matters

Cover the beets with cooled vinegar and keep out air. Vinegar must be cool before it touches the beets, since heat can soften the slices and spoil their texture. Keeping the beets fully covered and sealed from air during the week-long rest helps the pickle stay stable and evenly flavored.

Swap the allspice

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits about as well
  4. Allspicethe original

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
