The flavor team

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crumb of stale loaf
Thickens the sauce as it soaks up liquid and swells, giving it body.
Giblets of poultry
Release flavour and gelatin into the water, giving the sauce its savoury base.
Cream or melted butter
Adds richness and a smooth, silky mouthfeel to the finished sauce.

The step that matters

Beat the sauce until smooth and lump-free. Bread crumbs clump when first wetted. Beating breaks up these lumps and spreads the starch evenly, so the sauce thickens smoothly during boiling instead of setting grainy.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (onion, cream):

  1. Garlicbetter flavor fit
  2. Celerybetter flavor fit
  3. Nutmegbetter flavor fit
  4. Macethe original

Fit is the average pairing score against onion, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
