Roast Fowl

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Season the fowl with coarse sea salt.

  3. If using stuffing, fill the cavity of the fowl.

Roast and serve

  1. Place the fowl in a roasting pan and roast until fully cooked, about 1.5 hours.

  2. Carve the fowl by cutting along the line from the leg to the wing.

  3. Serve the liver with each wing if desired.
