Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Baked Apple Custard

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel, cut, and core the apples.

  2. Place them in a lined saucepan with the cold water and heat, bruising them to a pulp.

  3. Sweeten with moist sugar and add the grated lemon rind.

  4. Once cooled, place the fruit at the bottom of a pie dish.

Make the custard and bake

  1. In a bowl, mix the milk, eggs, and loaf sugar to make the custard, then pour it over the apples.

  2. Grate a little nutmeg on top.

  3. Bake in a 350°F (175°C) oven for 25 to 35 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Break down to a pulp to form the soft, flavourful base of the dish.
Eggs
Set the custard as they cook, giving it a firm, sliceable texture.
Milk
Forms the liquid base of the custard, adding creaminess and moisture.
Loaf sugar
Sweetens the custard and helps it brown slightly during baking.

The step that matters

Baking the custard. Eggs set as they heat; if the oven is too hot or the bake runs too long, the custard can curdle, turn grainy, or weep liquid. Watch for a just-set centre and remove promptly.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, milk, egg, nutmeg):
