Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass
- Gelatin-like protein that sets the liquid into a firm jelly as it cools.
- Lump sugar
- Sweetens the jelly and adds body to the syrup it forms with the juice.
- Lemons
- Supply the juice for acidity and the rind for aromatic lemon flavour.
- Sherry
- Adds its own wine flavour and aroma to the lemon syrup.
The step that matters
Skim well before adding the sherry. Boiling the mixture draws scum and impurities to the surface; removing them keeps the jelly clear. Adding sherry after skimming avoids boiling off its aroma and alcohol.
