Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and body, giving the syllabub its rich, thick texture.
White wine
Adds acidity and liquid that balance the sweetness of the sugar.
Double-refined sugar
Sweetens the dish and helps stabilise the whipped cream.
Lemon juice
Supplies acidity that thickens the cream and gives a bright, sharp flavour.

The step that matters

Whisking for 30 minutes. Whisking incorporates air and thickens the cream while the acid from the lemon and wine works on it. Stopping too early leaves the mixture thin, and over-whisking can turn cream grainy or buttery.

Swap the lemon

How well each one fits the dish's main ingredients (cream, white wine, sugar):

  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, white wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
